Ingredients:
3 1/2 cups water
2/3 cup dried elderberries
2 tbsp fresh minced/grated ginger
1 tsp ground cinnamon
1/2 tsp ground cloves
3/4 - 1 cup (Manuka) honey

Directions:
Add 2 cups water, elderberries, ginger, cinnamon, and cloves to IP. Place lid on pot, seal, and select manual, high pressure, for 9 minutes. When time is up, quick release pressure. Carefully strain the mixture into a 1-qt jar, pressing the syrup from the berries. Add remaining 1 1/2 cups cool water to jar. Once the mixture is no more than lukewarm, add honey and stir to dissolve. Store covered in the refrigerator for up to 2 weeks. Can be frozen to store for longer.

Suggested dosage: As a preventative measure, use 1 tsp per day for ages 2-12, 1 tbsp per day for ages 12+. Increase dosage to 4 x day if fighting illness. Do not give honey to babies under 1 year of age.
