Making rainbow cheesecake with the kids' help | Filipino Dutch Family

Hi guys, here are the ingredients for this rainbow cheesecake using a 23-cm tin for baking:

6 egg yolks
6 large eggs
2 tbsp lemon juice
300g sugar
1 tsp vanilla bean extract
300 g cookies of your choice
150g butter, unsalted
1200g cream cheese
