Saylem's Chocolate on Chocolate Cupcakes
2 cups All-purpose flour
2 cups Sugar
3/4 cup Unsweetened cocoa powder
2 tsps Baking powder
1.5 tsps Baking soda
1 tsp Salt
1 tsp Espresso powder
1 cup Milk
1/2 cup Vegetable oil
2 Eggs
1 tsp Pure vanilla extract
1 cup Boiled water
Chocolate Icing
1.5 cups Softened salted butter
1 cup Unsweetened cocoa powder
4 cups Icing sugar
1/2 cup Milk
1 tsp Pure vanilla extract
1/2 tsp Espresso powder
Set oven to 350°
Prepare your baking pans
Sift dry ingredients in one bowl and mix wet ingredients in another bowl or easy to pour container. Whisk wet ingredients and then mix with sifted dry ingredients. Making sure to scrape mixture from the bottom of the bowl, mixing for no longer than 2mins.
Pour mixed mixture into prepared cupcake tins.
Bake for 18mins. Depending on your oven these cupcakes could bake anywhere between 15-20mins.
Chocolate Icing
Sift dry ingredients and mix wet ingredients in an easy to pour container.
In a large bowl, add dry mixture in 1/4 amounts to the softened butter. Adding a 1/4 amount of your wet mixture at a time to whisk all ingredients together. Repeat until the mixtures are used. Whisk until your icing is smooth.
